Recipe Review - Buffalo Chicken Egg Rolls

Just consider me the OTHER Iowa Girl Eats. I am from Iowa; I am a girl; I eat. Works, right? I found this recipe via Pinterest (are you addicted too?) and knew I had to try it. Especially after last weeks Buffalo flop.

I think I've redeemed myself. These were TDF. I will dream of them tonight. And until I make them again. And, relatively healthy!

My changes:

  • I used Blue Cheese Laughing Cow rather than cream cheese. Yay extra flavor! I needed about 3 wedges for this recipe.
  • I mix my own ranch seasoning. Mix is a loose term. I dump in the key elements: garlic powder, onion powder, dried parsley, dill, salt & pepper.
  • I added sauce-less slaw mix. Crunch.
Served with a blue cheese salad and a beer. It was perfect. I'll have to remake next week during March Madness! I've had similar at Cheesecake Factory and Lucky Strike, but they are fried. Don't get me wrong, fried has its place now and then. But I don't like to fry at home, it makes my house stink. I didn't even really miss them being fried!

  1. Yer slackin' sweetheart. No new posts in a long time! We're having our first bar-b-que this weekend and the thought of not having Chad, Stacy and Ethan-monster over is a little depressing.

The weather is perfect - only a slight chance of a thunder-boomer but if there's enough wine? Who cares, right?

    Missing you all tons
