In which I make a confession.

I hate cooking.

I said it. I just DO. I don't know why? Could be a lot of reasons. I don't like the clean-up. E-Boo and The Hubs are moderately picky. I didn't grow up cooking, so I've had to learn on my own in the last 10 years or so. With The Hubs traveling, I know E-Boo is good to go with a grilled cheese sandwich and some veggies, and I'd much rather just have a bowl of cereal. I'm a decent cook (really, its just following directions) but I just don't like it.

But, its part of my 'job'. So, to try to make it fun again, I am trying to find new recipes! I also know that cooking and eating together as a family is important for many reasons, including our health.

So this week:
Monday - I had choir, so The Hubs and E-Boo had Manwich. Manwich for Man Night. Because I don't like Manwich. Gross.
Tonight - I'm trying a new recipe. I like buffalo chicken and I like potatoes. I can't be that bad? I'll do a review later! I figure that and a Blue cheese chop salad will be a great dinner!
Wednesday - This week is Ash Wednesday, the start of Lent (for us Catholics). We try to fast throughout the day (meaning eat only one full meal and 2 small snacks) and abstain from meat. For dinner we'll have grilled cheese sandwiches, tomato soup and veggies & dip.
Thursday - I am trying a very popular recipe among my online friends. Sure, its called Balsamic & Brown Sugar Glazed Pork. But, its been dubbed "Hooker Pork" because its made the rounds and always pleases. I'll serve roasted veggies (potato, brocoli, asparagus, onion & pepper) with this.
Friday - Since we'll be into Lent, Fridays mean abstaining from meat. And we'll be partaking in the very popular Fish Fry at church. Although, we gave up French Fries, so that'll be tough!
Saturday - we have NO PLANS this weekend, so lots of family time! I think I'll try this recipe, but using chicken. Of course, with rice and some broccoli. We'll also have a big brunch when we wake up!
Sunday - after church, we'll just hang out. The Hubs is flying out Monday morning for the week, so I'll send him off with some good old fashioned meatloaf, mashed potatoes and corn!

I also have this soup brewing right now. I love potato soup and am thrilled to find a "skinny" version of it. I have loved every recipe I've snagged off of her site, so be sure to check it out. You can't go wrong! This with a salad will make for some great lunches this week!

  1. I didn't know this either, about you! That soup sounds good.

    I'm making quiche, beef stroganoff, shrimp & brown rice w/pepita sauce (a nutty veggie sauce), ziti w/ 'sausage' (italian seitan sausage),veggie quiche w/gorgonzola. We often have salads with meals and I try to throw spinach in wherever it will fit.

    Each week, Mark and I look through our cookbooks and Cooking Light (love having a subscription) and pick a few new things to make. The rest is tried and true. We avoid recipes with too many ingredients or ones that take too long. We've had good luck with this. Prevents boredom.
