Recipe review - Baked Potato Soup

I like to have simple lunches, something I can reheat and throw together quickly. Otherwise, I'll not eat, and then I get cranky! My go-to is soup and a salad. I took this recipe from Skinny Taste. If you haven't checked out her website, do! Everything that I've made (and I've made a lot) is REALLY good.
Without bacon, as it was a meat-less day

My adaptations:

  • I steamed the cauliflower in the microwave. 
  • I added a 3rd potato, and didn't blend it. I like to have chunks in my soup.
  • Season REALLY well. This time, I used Lawry's Seasoning salt, fresh garlic and a lot of pepper. I look forward to playing around with the seasonings. 
  • I used green onions rather than chives. No reason why. Other than I didn't have chives! 
I will make this again. I may try to double it next time, so I have plenty to freeze. This went well with a yummy salad for lunch!

  1. Sounds delish - I might even add some chopped spinach. But then Popeye would want me to.
